One thing we have known for a long time is that the more fruits and vegetables people eat,the fewer medical conditions they have. High consumption of fruits and vegetables reduces your risk of diabetes,cancer,stroke,heart disease,Alzheimer's,depression,osteoporosis and any other medical condition caused by inflammation. What we didn't know was why. What is it in fruits and vegetables that confers such a broad spectrum of health benefits?
I started studying this question back in 1993. I turned my health picture around from type two diabetes,high blood pressure and high cholesterol by changing what I ate to include more fruits and vegetables. Medical science had been studying the same question but the answers were not definite. When studies were done on individual vitamins,minerals and fiber,the results were equivocal,at best. One study would show benefits,the next would show no benefit or even harm. One study cited an increase in lung cancer with beta carotene in former smokers.
The watershed for me was when I went into the lab and tested foods to see which ones most effectively killed Candida albicans. When Candida overgrows,it produces gliotoxins. Gliotoxins are poison to your immune system cells. Once gliotoxins weaken your immune system,this allows overgrowth or infection by other critters. The increase number of these critters is what leads to the CHRONIC INFLAMMATION that is the cause of most western disease.
My experiments showed that some foods were much more powerful at killing Candida than others. The darker the color,the more potent the critter killing effect.
